This Halloween the school meals menu featured pumpkin soup, pumpkin gnocchi, a pumpkin confit and the kitchen team also made 350 pumpkin muffins, each with a chocolate Halloween decoration on top! Coming up we have Thanksgiving, when the ‘Tradition’ offering will be turkey with seasonal vegetables. Catering for Christmas will also feature turkey, and Chef has hinted that there will be a chocolate Yule log for dessert! Then there’s Easter, St Patrick’s Day… plenty in the calendar to keep our school restaurant lively and creative.
Using local ingredients in the school catering is something Chef Robert does as much as possible, not just on special occasions. La Cote International School is situated among the beautiful apple orchards of Aubonne, surrounded by farms of all kinds. This year Chef bought 270 kilos of fresh apples from the farm right next door to our school building. More fruit is sourced from other nearby farms, including very close by at Fechy.
As far as meat goes, the pork and beef served at LCIS are Swiss, lamb is always European – Swiss, Irish or British. Due to limited local demand, our winter festival turkey meat is sourced from neighbouring France. We keep our food miles down as much as possible, as well as providing fresh, nutritious and tasty food from known, consistent, local sources.
