To keep the  La Côte International School daily lunch time menu varied, interesting and healthy, Head Chef Robert takes inspiration from festivals in the international calendar throughout the year and uses seasonal local produce as much as he can.

Festive Flavors to Celebrate the Season

This Halloween the school meals menu featured pumpkin soup, pumpkin gnocchi, a pumpkin confit and the kitchen team also made 350 pumpkin muffins, each with a chocolate Halloween decoration on top! Coming up we have Thanksgiving, when the ‘Tradition’ offering will be turkey with seasonal vegetables. Catering for Christmas will also feature turkey, and Chef has hinted that there will be a chocolate Yule log for dessert! Then there’s Easter, St Patrick’s Day… plenty in the calendar to keep our school restaurant lively and creative.

 

Healthy Choices

Offering healthy food to our active young school community is obviously the most important feature of LCIS’s school meals. That’s why every day there is a ‘Tradition & Discovery’ choice and a ‘Wellbeing’ choice. One option will always be vegetarian, and we regularly offer fish as well as ensuring there are different vegetables on offer and frequently including leafy greens - known to be good brain food! Students and staff may also serve themselves from a varied cold salad bar and fresh fruit is always available alongside the day’s dessert, which is often yoghurt or fresh fruit salad.  

 

Semaine de Gout (Taste Week)

Our kitchen also takes part in the national Semaine de Gout (Taste Week), which features a different food group each year. The week is a celebration of good food, proximity, seasonality and sustainability. The idea is that chefs across the country create dishes and menus around the featured food, using locally sourced ingredients.

 

 

Local Produce

Using local ingredients in the school catering is something Chef Robert does as much as possible, not just on special occasions. La Cote International School is situated among the beautiful apple orchards of Aubonne, surrounded by farms of all kinds. This year Chef bought 270 kilos of fresh apples from the farm right next door to our school building. More fruit is sourced from other nearby farms, including very close by at Fechy.
As far as meat goes, the pork and beef served at LCIS are Swiss, lamb is always European – Swiss, Irish or British. Due to limited local demand, our winter festival turkey meat is sourced from neighbouring France. We keep our food miles down as much as possible, as well as providing fresh, nutritious and tasty food from known, consistent, local sources.
